Fire-Kissed Eggs

Fire-Kissed Eggs with succulent grape tomatoes and fire roasted fabulous!

Ingredients
  

  • 16 Raw eggs in shell
  • 1.5 C. Grape Tomatoes
  • 2 Cans of Fire Roasted Tomatoes
  • 1 Tbsp White Cooking Wine (optional- the alcohol cooks out but adds great flavor)
  • 2 Tbsp Olive Oil (for the pan)
  • 1/4 tsp Salt
  • 1/8 tsp Pepper
  • 2 Tbsp Cilantro chopped
  • 1-2 Tbsp Grated Parmesan Cheese
  • 1/4 tsp Garlic Powder
  • 1 Tbsp Tobasco (optional)

Equipment

  • 2 Small mixing bowls
  • 1 Can opener
  • 1 Large pan
  • 1 Spatula
  • 2 Silicone Egg Molds
  • 1 Instant Pot
  • 1 Instant Pot Trivet
  • 1 Measuring cup
  • 1 Large cooling rack
  • 1 2.5 Qt Casserole dish with Lid (lots of choices, I've used CorningWare)

Method
 

  1. Plug in your Instant Pot (or 2-Quart Saucepan/Pot).
  2. Pull 2 Pack Silicone Egg Bite Molds holds, 7 eggs each with Steamer Rack.
  3. Spray Silicone Molds with PAM Oil Spray creating coverage to keep eggs from sticking.
  4. Crack each individual egg on the side of a small mixing bowl, and place into each mold.
  5. Sprinkle with salt, pepper, & powder garlic.
  6. After each mold is filled with each egg, place the lid on your mold and stack on top of each other, placing on the Instant Pot Trivet.
  7. Add 1 cup water to bottom of Instant Pot.
  8. Place Egg Molds & Trivet into the Instant Pot.
  9. Make sure your Steam Spicket is in the off position.
  10. Place lid on the Instant Pot and Pressure Cook for 11 Minutes.
  11. Cut Grape Tomatoes in half and place in a small mixing bowl.
  12. Open 2 cans Fire Roasted Tomatoes.
  13. Using a large skillet, add 2 Tbsp Olive oil on medium heat.
  14. Dump 2 can's Fire Roasted Tomatoes & cut Grape Tomatoes into the heated pan.
  15. Move Tomatoes around with spatula (easy) to keep from burning for 5 minutes.
  16. *Optional: add 1 Tbsp white cooking wine for fabulous flavor.
  17. Shut off burner and remove from heat, allowing to sit.
  18. Once eggs are done, remove molds and place on cooling rack to cool down
  19. In a Casserole dish, add cooked tomato mixture.
  20. Remove eggs from molds and place over tomato mixture.
  21. Sprinkle with Cilantro and Parmesan cheese.
  22. Place lid on casserole dish to keep warm and serve!
