I love eggs in just about every way possible and eat them almost daily. They give me an energy boost, provide high-quality protein, and keep me satisfied throughout the day. But as much as I enjoy them, I sometimes crave variety. One morning, I decided to switch things up from my usual hard-boiled eggs or egg bake and get a little creative.


How This Recipe Came to Be 🍅
I scanned my fridge and pantry for inspiration and, to my delight, spotted a couple cans of fire-roasted tomatoes—a staple in my kitchen. Instantly, an idea sparked: What if I paired their smoky, tangy flavor with hardboiled eggs for a simple yet exciting dish? I wanted something quick, flavorful, and different, and with a few extra ingredients, this creation came to life. I love to explore and get a kick out of creating something that pans out. No pun intended…🧅
Of course, every new recipe needs a taste tester. My husband is my go-to for honest feedback, and after a few tweaks, this dish became a regular request in our house—high expectations included! Haha.

To truly put it to the test, I made it for my sister’s birthday breakfast, where she had an amazing spread of nibbles. I needed something easy yet impressive to contribute, so I brought this dish along. The verdict? A unanimous two thumbs up from the family! 🫐

Egg Molds for Instant Pot – A Breakfast Game Changer! ☕️
I’ve always loved hardboiled eggs, but peeling them? Not so much. No matter what trick I tried, getting those shells off cleanly was a hit-or-miss struggle. I know I’m not alone—how many times have you recruited family members to help de-shell a batch of eggs?
Then, I discovered individual silicone egg molds that let you hardboil eggs without the shell—just crack, pour, and boil. It was a game-changer… until I found something even better: the Instant Pot!

Realizing I could make perfect hardboiled eggs in a pressure cooker was a total win. After browsing different options, I landed on Sensible Needs silicone egg molds, designed specifically for pressure cookers. Each mold has seven egg compartments, so naturally, I bought two! Since my husband and I eat a lot of eggs, this has made breakfast prep effortless. 🥚🥚

I absolutely love fire-roasted tomatoes! Cooking them over an open flame enhances their natural sweetness while adding a subtle smoky depth and a touch of caramelized richness. This creates a more complex and flavorful taste than regular tomatoes. 🧅
One of my favorite ways to enjoy them? Over hardboiled eggs! The combination is simple yet surprisingly bold, turning an everyday dish into something special. You can find fire-roasted tomatoes in most grocery stores, usually canned. I prefer choosing an Italian brand or a brand that is organic—the flavor always feels more authentic. Add some Grape tomatoes to the mix and WOW, what a wonderful combination of flavors! 🧄

Fire-Kissed Eggs
Equipment
- 2 Small mixing bowls
- 1 Can opener
- 1 Large pan
- 1 Spatula
- 2 Silicone Egg Molds
- 1 Instant Pot
- 1 Instant Pot Trivet
- 1 Measuring cup
- 1 Large cooling rack
- 1 2.5 Qt Casserole dish with Lid (lots of choices, I've used CorningWare)
Ingredients
- 16 Raw eggs in shell
- 1.5 C. Grape Tomatoes
- 2 Cans of Fire Roasted Tomatoes
- 1 Tbsp White Cooking Wine (optional- the alcohol cooks out but adds great flavor)
- 2 Tbsp Olive Oil (for the pan)
- 1/4 tsp Salt
- 1/8 tsp Pepper
- 2 Tbsp Cilantro chopped
- 1-2 Tbsp Grated Parmesan Cheese
- 1/4 tsp Garlic Powder
- 1 Tbsp Tobasco (optional)
Instructions
- Plug in your Instant Pot (or 2-Quart Saucepan/Pot).
- Pull 2 Pack Silicone Egg Bite Molds holds, 7 eggs each with Steamer Rack.
- Spray Silicone Molds with PAM Oil Spray creating coverage to keep eggs from sticking.
- Crack each individual egg on the side of a small mixing bowl, and place into each mold.
- Sprinkle with salt, pepper, & powder garlic.
- After each mold is filled with each egg, place the lid on your mold and stack on top of each other, placing on the Instant Pot Trivet.
- Add 1 cup water to bottom of Instant Pot.
- Place Egg Molds & Trivet into the Instant Pot.
- Make sure your Steam Spicket is in the off position.
- Place lid on the Instant Pot and Pressure Cook for 11 Minutes.
- Cut Grape Tomatoes in half and place in a small mixing bowl.
- Open 2 cans Fire Roasted Tomatoes.
- Using a large skillet, add 2 Tbsp Olive oil on medium heat.
- Dump 2 can's Fire Roasted Tomatoes & cut Grape Tomatoes into the heated pan.
- Move Tomatoes around with spatula (easy) to keep from burning for 5 minutes.
- *Optional: add 1 Tbsp white cooking wine for fabulous flavor.
- Shut off burner and remove from heat, allowing to sit.
- Once eggs are done, remove molds and place on cooling rack to cool down
- In a Casserole dish, add cooked tomato mixture.
- Remove eggs from molds and place over tomato mixture.
- Sprinkle with Cilantro and Parmesan cheese.
- Place lid on casserole dish to keep warm and serve!
