Jilly’s Egg Bake~ family favorite! 👩🏼🍳

Egg Bake mornings are the best mornings! This easy, make-ahead dish is a game-changer for busy mornings, giving my hubby and me the perfect balance of flavor, nutrition, and convenience. I actually crave this casserole—it’s that good! With just a little sauteing and a mix of delicious ingredients, you’ll have a dish so irresistible, your family will be asking for seconds (and thirds!). Let’s get cooking! 🧑🍳



I just love this combination of these vegetables. I get so much energy out of the broccoli. It’s all about the balance of flavors and textures! Broccoli brings a slight crunch and a mild, earthy taste that pairs beautifully with the sweetness of bell peppers and onions. The cherry tomatoes add a juicy, tangy burst that brightens the whole dish. When baked with eggs, these ingredients meld together into a rich, savory, and slightly sweet combination. 💋

The eggs provide a creamy, fluffy base that holds everything together, allowing each bite to be both hearty and fresh. Plus, if you add a little cheese on top to melt in—say, sharp cheddar, goat cheese, or even feta—you get an extra layer of depth that enhances all the other flavors. I’m a lover of cheese, really just about any cheese. The great thing about this egg bake is, you can add which ever cheese rocks your world. For me, goat cheese makes the list. I put it on just about anything and it really creates a wonderful tangy, earthy, and creaming flavor you’ll love. Your egg bake will be packed with flavor! The tanginess of goat cheese, the sharpness of cheddar, and you can add a kick from green Tabasco sauce—this gets a chef’s kiss! 🧑🍳💋 The garlic powder will add that perfect savory depth, too.

Jilly’s Egg Bake
Equipment
- 1 9×13 Baking Dish
- 1 Large frying pan
- 1 Spatula
- 1 Medium Mixing Bowl
- 2 Small mixing bowls
- 1 Electric Mixer or Whisk
- 1 Chef Knife
- 1 Vegetable Spinner
- 1 Colander
Ingredients
- 12 Whole Large Eggs
- 1 C. Whole or 2% Milk
- 1/2 C. Regular Sour Cream or Lite Sour Cream
- 1 Whole Sweet White or Red Onion
- 1 C. Broccoli
- 3 Red, Green, and Yellow Peppers cut in halves
- 1/3 C. Cilantro
- 1.5 C. Shredded Cheese of choice
- 1/4 C. Goat Cheese Crumbles
- 1 C. Grape Tomatoes
- 2 Tbsp White Wine to sauté onions
- 2 Tbsp Olive Oil
- 1 Tsp Garlic Powder
- Salt and Pepper to taste
Instructions
- Turn oven on to 400 degrees
- Prep all veggies starting by washing peppers & broccoli and tomatoes, place in colander to drain off water.
- Cut broccoli into large bite size florets, including steams, and set aside.
- Cut Peppers in half, removing seeds and inner membrane, dice into small pieces and set aside.
- Cut Cherry Tomatoes in thirds and set aside in small bowl.
- Rinse Cilantro and put in salad spinner to wick away water, and set aside.
- Dice onions into small pieces and place in a small mixing bowl.
- In a large pot, place steamer basket inside, add 2 cups water and bring to boil.
- Add Broccoli florets and steams, turn burner to medium and steam approx. 5-6 min until just tender enough to pierce with a fork.
- Remove broccoli and allow to cool before cutting into smaller bite size pieces.
- In a large skillet, turn burner to medium and add olive oil.
- Once skillet is heated, add onions stirring consistently to start to sear.
- Slowly Add 2 table spoons white cooking wine (alcohol cooks out), and continue to sauté for fabulous flavors.
- Add Peppers to onion mix and move around to get the caramelize flavors.
- Remove peppers and onions and set aside.
- Start by cracking 12 eggs into a medium mixing bowl
- Add Whole Milk and Sour Cream (gives it a rich fluffy yet dense consistency)
- Add spices and salt/pepper to eggs mixture and whisk or use electric beaters until thoroughly blended.
- Spray baking dish with PAM Olive Oil Spray.
- Add all veggies including cilantro to baking dish
- Pour egg mixture over veggies, using a fork to disperse evenly.
- Once oven reaches 400 degrees, place in medium rack.
- Cook for approximately 30 minutes (depending on how your oven cooks).
- Add shredded cheese and goat cheese to top and continue cooking.
- Check eggs doneness by looking for lightly browned edges and top. The center should reach 160F degrees.
- ** If more inner cook time is needed but top is browning, you can cook with foil over the top of the casserole dish.
- ** For larger gatherings where more eggs are required, add more cook time. With 24 eggs I've had to cook 45 minutes.
- ** I normally have side dishes, so if eggs are done first, I'll keep them in a "warmer" with foil on top to keep moisture in.
- ** Like to SPICE IT UP? Add green chilies and jalapeños .
