Best Irish Summer Coleslaw Recipe – Let’s get shredded!

The Recipe!

Prep time: estimated 30 minutes

  • 2 cups shredded Purple cabbage
  • 2 cups shredded Green cabbage
  • 1/2 cup chopped Green Onions including tops
  • 1/2 cup Green Peppers
  • 1/2 cup Red Peppers
  • 1/2 cup shredded Baby carrots
  • 1/4 cup Cilantro (to taste)
  • 1 cup Celery including leaves
  • 1/4 seasoned pepper
  • 1/3 cup Italian Salad Dressing (I like Newman’s)
  • Add salt to taste if needed after dressing
  • 1/4 cup chopped or whole salted Peanuts (add in last or after chilling)

Toss together lightly. (chill for an hour is optional). Final step, add Peanuts and toss lightly again last minute or if transporting, toss in once you reach your destination. Feel free to adjust the recipe to your liking! Enjoy!
